Baked meringue is a thing of beauty, but it’s also a tough old bird.

Meringue can be temperamental and unforgiving – if you don’t handle it with the utmost care (and attention), it will not work.

It’s like cooking without an oven: easy to do, but hard to master. And yet, baked meringue has some secrets that make its production much easier for even the most novice cook in your life.

Ingredients:

  • 4 egg whites, at room temperature
  •  Pinch of salt
  •  1 cup (220g) CSR Caster Sugar
  •  1/2 teaspoon vanilla essence

Instructions:

  1. Preheat oven to 120°C.
  2. Line two baking trays with non-stick baking paper.
  3. Use an electric mixer to whisk egg whites & salt until soft peaks form.
  4. Slowly add sugar, whisking between spoonfuls until sugar dissolves.
  5. Once sugar has been added, whisk on high for 3 mins.
  6. Add Vanilla Essence and whisk.
  7. Use two teaspoons to spoon meringue onto lined trays. 
  8. Reduce the oven temperature to 90°C.
  9. Bake meringues for up to 1 hour 30 mins. 
  10. Once baked leave meringues in the oven to cool completely.

Store in an airtight container & consume within 7 days.
