I know what you’re thinking… a salad? Really? But just hear me out for a minute. I’ve been trying to eat healthier, and salads are my go-to because they’re easy to whip up in no time flat. And this one is especially great because it only has four ingredients!
This Feta & Beetroot salad recipe is so simple that even someone who doesn’t cook can make it with ease. It’s also a great way to incorporate more veggies into your diet is with a simple and delicious salad.
The ingredients required are easily found in the grocery store: feta cheese, beets, arugula, and walnuts. You can add other vegetables such as cucumbers or roasted red peppers to make it more flavorful.
Within around 10 minutes, you’ll be enjoying the deliciousness of fresh feta cheese and homemade beetroot dressing on top of greens that will leave you feeling satisfied without the guilt from too many calories or fat grams.

- 120g bag Mesculin Salad Mix
- 1 tin baby beetroots, cut in half
- Crumbled feta
- 2 tbsp caramelised balsamic vinegar
Instructions
- Mix the salad, beetroots and crumbled feta together in a bowl.
- Drizzle with the caramelised balsamic vinegar.
