Salmon with Warm Pesto Potato Salad

Salmon is a firm, flaky fish with a mild flavor. It’s full of omega-3 fatty acids and rich in protein. This recipe calls for unlimited servings because it’s the perfect healthy dish for meal prep.

The warm pesto potato salad is a light side dish that brings some freshness to this heartier main course. Plus, it tastes great cold or at room temperature so you can enjoy leftovers all week long!

A lot of recipes for pesto potato salad have boiled potatoes. This often leaves your potatoes too soft and mushy, making it harder to stir in other ingredients.

Bake, Don’t boil! You will have a better texture to work with and the pesto potato salad will have more flavour.

Ingredients

  • 800g sweet potato, peeled and cut into even 4cm x 4cm chunks 
  • 4 x 180g salmon fillets 
  • 150g bag baby spinach 
  • 2 tablespoons basil pesto

Instructions

  1. Preheat oven 180°C.
  2. Place the sweet potatoes on a baking tray and season with sea salt and cracked pepper.
  3. Cook for 15 minutes or until tender.
  4. After 5 minutes, place the salmon fillets on another baking tray, season with cracked pepper and bake for 10 minutes.
  5. Remove both, place the cooked sweet potato into a large bowl, add the spinach and pesto and toss to combine.
  6. To serve, place the delectable salad on a plate nestled next to a salmon fillet.

Keeping Your Salmon Fresh In The Fridge

You know those times when you go to the grocery store and buy a big package of salmon, only to have it start going bad in your fridge before you can finish eating it?

There’s nothing worse than thinking about all that expensive fish going bad because you couldn’t use it fast enough. Salmon typically lasts 1-2 days in the fridge.

Always wrap your salmon tightly in cling wrap, if you have a food vacuum – even better!

Some people keep their salmon on a bed of ice. If you plan on eating it same day, you can simply store your salmon in the coldest part of the fridge.
