Apple Crumble Parfaits From Live Love Nourish
Developed by Nutritionist Casey-Lee Lyons from Live Love Nourish (www.livelovenourish.com.au) this nourishing Apple Crumble Parfait is made with layers of spiced apple and yoghurt and topped with a nutty crumble.
This recipe is free from gluten, dairy and sugar and vegan friendly.
Apple Crumble Parfaits From Live Love Nourish

Ingredients
- 2 large green apples, peeled, thinly sliced
- 1 tsp coconut oil
- 1/2 tsp cinnamon
- pinch nutmeg
- 150g coconut/almond yoghurt
- Crumble:
- 1/2 cup (60g) almond meal
- 1/2 cup (45g) organic desiccated coconut
- 1 TBSP (20ml) coconut oil
- 1 TBSP (20g) almond spread/nut butter
- 1/2 tsp vanilla powder
- 1/2 tsp cinnamon
- pinch nutmeg
- 2 TBSP (20g) flaked or slivered almonds
Instructions
- Begin by making crumble – pre-heat oven. Melt coconut oil with almond butter in a small saucepan.
- In a mixing bowl combine almond meal, coconut, vanilla, cinnamon and nutmeg and pour in melted oil/almond butter. Combine well. Stir through flaked almonds.
- Spread crumble onto a baking tray and bake for 10-12 minutes or until golden.
- Meanwhile melt coconut oil in a small saucepan, add apples, cinnamon and nutmeg. Cook over low-medium heat and stir frequently until apples are softened.
- Assemble parfaits in glasses with layers of apple, yoghurt and crumble and repeat.
- Serve warm or place in fridge to chill.
Notes
Tip – If you have a sweet tooth you can add a touch of maple syrup or coconut sugar to your crumble mixture.
