This is a pretty easy to make cookie recipe. I prepare these almost every Easter, and my family just loves them, they disappear in a couple of hours. The ingredients are pretty simple, so even people who have no experience in baking can prepare them.
If you have a kid, who is addicted to chocolate and won’t eat anything else, you can add some cocoa to the recipe and tell them they are chocolate cookies. Works out great most of the times.
Delicious Easter Cookies with Almonds
Prep Time: 25 minutes
Cook Time: 15 minutes
Total Time: 40 minutes
Serving Size: 40 – 50 Cookies
Ingredients
- 3 eggs + 1 yolk
- 400 g cake flour
- 100 ml sunflower seed oil
- 150 – 200 g white or brown sugar
- 1 tsp baking soda
- 1 lemon – you only need the grated zest
- ½ cup of almonds – cut in half
- 1-2 drops of vanilla extract
- 1-2 drops of rum extract
Instructions
- 1. Beat the eggs and the sugar with a mixer until you get a creamy substance.
- 2. Add the sunflower seed oil and stir until the ingredients mix perfectly.
- 3. Gradually add the flour and the baking soda, and keep stirring until there are no flour lumps left.
- 4. In the end you can add the vanilla and rum extracts, the lemon zest and the almonds. Stir again, so all these ingredients can be equally spread in the dough. You can also add some cocoa, if you like.
- 5. Leave the dough for about an hour, then divide into a few pieces and roll each piece until you get a sheet of dough which is around 1 cm thick.
- 6. Cut out the desired cookie shapes and arrange the cookies on an oiled baking tray or on a shallow tin covered with baking paper.
- 7. Beat the egg yolk and daub the top of each cookie with it. You can also sprinkle a little sugar on each.
- 8. Preheat the oven up to 200 ºC and bake the Easter cookies for about 10-15 minutes, depending on the oven.
